Amish Whoopie Pie
Whoopie pies are considered a New England phenomenon and a Pennsylvania Amish tradition. Whoopie Pies have also been known as a "gobs." in Western Pennsylvania. A whoopie pie is like a sandwich, but made with two soft cookies with a fluffy white filling. Traditional whoopies pies are made with vegetable shortening, not butter. The original and most commonly made whoopie pie is chocolate. but cooks like to experiment, and today pumpkin whoopie pies are a favorite seasonal variation.
- 1 cup shortening
- 2 cups sugar
- 1 cup hot water with 2 tsp baking soda
- 4 1/2 cups flour
- 4 eggs
- ¾ cup cocoa
- 1 cup sour milk
- 2 tsp vanilla
- 1 or 2 shakes of salt
- 1 cup milk
- 1 cup shortening
- 4 Tbls flour
- 1 tsp vanilla
- 1 cup sugar
- Mix cookie ingredients together. Batter is slightly thick so it can be dropped from a teaspoon. Drop onto cookie sheets into small rounds, trying to keep them roughly the same size. Bake at 375 degrees F (175 degrees C) for 8-10 minutes on an ungreased cookie sheet.
- For the filling: cook together the milk and flour until thick. Place in a small bowl and add sugar, shortening and vanilla. Beat until spread-able.
